Splenda, best known for its marketing logo

I’ve been trying different bread mixes for the last several weeks andtoday I made Gluten-free Pantry’s Fav. Sandwich Bread. In the past Ihave been exclusively using the Ener-G egg replacer and all the loavestasted awful and had a layer at the bottom that looked uncooked.Today I used the flax meal and water with an extra teaspoon of bakingpowder to the dry mix.Has anyone else experienced problems when baking with Ener-G eggreplacer?

    I have made many loaves of bad tasting bread but the best one that Ihave found and stuck with so far was the Gluten Free Gourmet’s Egg-FreeBread. It uses 8 tsp of Egg Replacer and it comes out very ediblecompared to my other recipes. It also is moist instead of dry andbreaking up like all of the others. I used my bread maker for it… Imay have to try your idea below and see if that makes it even better.

    1 T ground flax seed4 T wateer

    Cook it over a medium heat it until it gets pasty. I quadruple thebatch and store it in thr fridge. It’s the best and cheapest replacerI have found. PLUS… I KNOW all the ingredients and can buy organicflax meal to do it : )

    How interesting; I have read a range of amounts for water from 1Tflax and 2 T water also 2 and 1/2, 3 and now your post saying 4 Twater. Some have said to cook it a bit and some not. I didn’t putit on the stove but think I will try it that way to see thedifference.Have you/do you ever use flax to replace egg without cooking it?When do you want to cook it and when not?

    Without the input of the kind people posting information here, Iwould probably still be struggling with the Ener-G product that I’vebeen failing with for almost 6 weeks now. I sure appreciate all I’mlearning from this group.

    I’m far from an expert but I’m on a 4 day rotation diet and onQuinoa day, I use ground flax as my egg replacer. I don’t the flaxfirst or anything just throw it and 3 Tablespoons of water in wherethe egg would go. Everything I’ve tried this with has come out niceand fluffy so I’m assuming it is okay.

    I haven’t tried it in bread yet but have made some cookies and,today, quite a succesful Quinoa carrot cake.
