Cool whip/whipping cream
I am in need of a recipe for a Cool Whip/Whipping cream substitute!!!Does anyone have any suggestions? I am making pies for our family’sannual get together on News Year day and it’s for the top of thepies! French silk pies! I would appreciate anyones help in thematter! I wanted it to be GFCF and cannot figure out the substitutefor the Cool Whip I have always used for the pies topping! (Kindawanted to show the whole family that you can still eat stuff that isgood on the GFCF diet!)

I have never bought it but I know that Whole Foods sells a cool whiptype substitute. I saw it in the freezer section there.

From Carol Fenster’s book, SPECIAL DIET CELEBRATIONS:
SOY BASED WHIPPED TOPPING(NO WHEAT, GLUTEN, DAIRY, EGGS OR SUGAR)1/2 C. soft silken tofu2 T. pure maple syrup or honey1/2 t. gf vanilla extract1/4 t. gf butter-flavored extract1/8 t. saltCombine all ingredients in blender or mini-food processor and blend thoroughlyuntilvery, very smooth. makes about 1/2 cup Serves 4 (2 T each)

NUT-BASED WHIPPED TOPPING(NO WHEAT, GLUTEN, DAIRY, EGGS OR SUGAR, BUT DOES CONTAIN NUTS)3/4 C. raw cashews or almonds1/4 C. Honey or maple syrup2 t. gf vanilla extract1/2 t. gf butter-flavored extract1/4 C. water1/4 t. saltPlace nuts on baking sheet and toast in 350 degree oven for 5-8 minutes or untillightlytoasted, but not browned. In blender, grind nuts fiinely. Add honey, vanilla,and butterextracts, water and salt. Process again until very, very smooth-about 5-8minutes.Refrigerate until ready to use. makes 1 cup. Serves 8. There is one out there called “Hip Whip,” I don’t know theingredients, my daughter doesn’t care for whipped cream so I never buyit… but my HFS carries it.
