Ok, getting comfortable with diet, now need help w/getting more calories in…
We have been gf/cf since august and I am feeling much more comfortablenow with it. But I need help getting more calories in my 4 yr. oldpdd-nos son. He is soooo skinny. I took a great nutrition therapyclass last month and it was great about understanding the types ofsupplements and things that are helpful. she mentioned a few ideas ofhow to add things into eggs, etc. but I didn’t write any of that down(and of course have now forgotten). So I need help from the seasonedveterans–help me help me help me… I don’t have a food processor orgood mixer yet–but will get one if that will help with this process. also, ds loves breads, muffins etc–thought this might be a good wayto sneak some extra calories in but not sure what and how to add anything?

Hi Lisa, You are right about the muffins. I make carrot muffins all the timeand you can sneak all kinds of stuff into them. I posted the recipe a couple ofweeks ago for someone. I could post again tonight if you like. (at work rightnow). The food processor is the way I would go. I use mine for only gf/cfstuff to avoid cross contamination. I have one of the larger black & deckerones, not too expensive but works great. My kids love the fruit smoothies, ifyou don’t add too much of the milk substitute, it is like sherbet. We serve itfor desert! and you can also hide lots of stuff in that and the tast doesn’tcome through! Also, my ASD son loves shepards pie and a homemade veg/beef/ricesoup I make, I could post those recipies too if you like.

When baking I will often add an extra egg for added protein. I buyNutribiotic Rice Protein Powder and add it to smoothies or nut butterballs (you can’t bake with it). Here a few very easy ways I use to get more protein into my son:
GFCF spaghetti: I make the sauce liquidy and then add some proteinpowder just before I serve. He can’t tell the difference. Althoughmy son really refuses meat, I can put ground turkey in the spagsauce and he’ll eat it.
I make cashew butter (cashews with a bit of olive oil in the foodprocessor if you do get one, otherwise you can buy it) and mixprotein powder into that (you can also hide yucky supplements likephosphatidylcholine). I dip GFCF pretzels into the nutbutter.He’ll eat that every day and it is extremely easy/fast.
When baking muffins, cookies, etc, or making pancakes, I add groundhemp hearts (which are a bit harder to get in the US because I thinkthe only source is Canadian) but I also try to use the flours thatare higher in protein like buckwheat in pancakes and sorghum incookies and muffins. Rice flour doesn’t offer much nutritionally soI mix in a variety of others.
For me the trick has been to add a bit to everything rather thantrying to get him to each chicken fingers for example. That almostalways fails, even when I disguise them as french fries. The ideais you want more protein to help your child grow.
