I don’t know how to make rice yogurt but I have a “mock” yogurtrecipe made with Vance’s dairy free that my son loves. It is fromKaryn Seroussi’s book.
Ersatz Yogurt
3/4 cup darifree powder1 cup unsweetened pineapple juice1/4 cup lemon juice2 cups hot water1/2 cup water mixed with 1/2 cup tapioca starch
Heat pineapple juice until hot but not boiling and stir in darifreepowder until dissolved. Add two cups hot water and lemon juice. Stirin the last 1/2 cup water with tapioca starch. Stir until thick andthen refrigerate. Do not serve for 24 hours or it may be gummy.
I mix in 2 cartons of stage 2 Gerber Pear/Pineapple after the yogurtis cool for added sweetness and then I mix probiotics into my son’sindividual yogurt portion before he eats it. I think it is a prettygood substitute.

I recently learned that many kids are allergic or will react to pineapple. Is there any issue with replacing the pineapple with another juice?
