Choc chip pumpkin muffins
I just wanted to let all of you know that I tried this new recipeyesterday and it is GREAT. It is super easy too. The muffins tastejust like the real thing. They are not heavy or dense at all. Hereit is:
Here is the recipe for Choc. Chip Pumpkin Muffins
1 cup sugar3/4 cup veggie oil8 oz. pumpkin2 eggs1 1/2 cup gf flour mix (I use Betty Hagman’s feather light, 2 partriceflour, 2/3 part potato starch, 1/3 part tapioca flour)1 tsp. xanthan gum1 1/2 tsp. baking soda1 1/2 tsp. baking powder1/2 tsp. salt1 tsp. cinnamon1 cup choc. chips
Mix first four ingredients. Combine dry ingredients and add to therest. Blend well. Add choc chips. Spray muffin tins or use muffinpapersand fill 2/3 full. Bake at 375 degrees for 18-20 minutes. This makesapproximately 16-18 muffins. Enjoy!
I don’t know who to give credit to for this recipe, but we love itand useit often. I add calcium powder and protein powder so I won’t feelguiltygiving it to the girls for breakfast

Anyone know of a way to decrease the sugar or substitute it in the recipe? Hasanyonebaked with Xylitol? Does it work in something like this?
