Egg replacers

I am difficulty with using the Ener-G egg replacer. I read on the boxthat I’m supposed to pack it down in the measuring spoon but thatstuff doesn’t “pack” it just falls out. Also it says do it one way ifthe recipe calls for unbeaten eggs and another if calling for beateneggs. None of the recipes I have been using specify this. they justsay “2 eggs” . How do you know whether to stir or beat? Are thereother tips/secrets for success with this stuff? All my attempts atbread have been abysmal failures. The heaviest loaves you’ve everseen and always a layer at the bottom that appears to be uncooked.

    4T water & 1 T ground flax. Heat it and stir until it thickens. I makea large batch of it and store in the fridge. It honest to Betsy, comesout jelly-like like egg whites. I use it in bread mixes and pancakesand it’s terrific. It is an excellent binder!

    It’s so close in texture, I measure equal volume. So about 2 T peregg? A little more or less isn’t going to spoil it. All eggs aren’tuniform, you know?

    I’ve read 3T water and 1T flaxseed on websites. Is that wrong? Ijust made some pancakes for the first time with that as the eggsubstitute and it still had a chewy, nasty texture :(

    It’s possible the extra table spoon makes it thinner. Like I said,it’s an excellent binder, so it’s going to behave differently basedon what your flour blend is. You might want to play with thethickness of your batter and try not to over mix. Allow for pocketsof unmixed “flour”. I know the experimenting is annoying but youlearn a lot through “error” : ) I reuse my flops for breading, breadcrumbs (for meatballs). You could even use the rubbery pancakes formaking GFCF bread pudding.

    I made pancakes yesterday 3 times from a BRM mix and they were allgooey and not eatable. I was using Ener-G replacer.Today I used Arrowhead Mills baking mix and the flax meal (1 T mealin 3 T warm water) and it was good for both waffles and pancakes.I’ll try the BRM with flax tomorrow and see what happens…
