Gfcf plan to start - and chicken nugget questions
I am really trying to get a handle on the GFCF diet, finally. Byfar, it is the hardest thing I have tried in recovering our son, andI know many parents tell me how much easier it is today than 10 yearsago.
So, here is my plan……our son is 5-1/2 years old, attends schoolfull-time (9:00 - 3:30) and is in daycare after school for 2 hoursand before school for 2 hours.
1. I can control what he eats at school, I make his lunch andprovide his snacks. I told the teachers about us starting the GFCFdiet, and they reassured me that they will not give our son anythingto eat other than what we provide. This part is easy except for thefact that there are very very few things he will eat. In fact, Isent in GF cereal with CF milk today for lunch.
2. I can control what he eats at home, although I am STILL trying tofind GFCF foods. Whenever I am in a pinch and he eats somethingwith gluten, I give enzymes. I am in the process of trying GFbreads, GF cereals, GF chicken nuggets, GF spaghetti and GF pizza.He eats nothing else.
3. I cannot control what he eats at daycare. Our daycare provideris very supportive of what we are doing biomedically, however, she isrelying on me to provide the GFCF foods. So, when I do find a GFbread he likes, I will bring it over to her house, etc.
I am hoping this will work…and praying for gains with this diet.
So, I tried making GF chicken nuggets last night…this is big forme. I had GF breading and I fried them in safflower oil. Theylooked like the real thing…but my son wouldnt even tough them.Very discouraging. Is there anything I can do to spice themup..make them taste better? Salt? Seasonings like McDonalds?

My son starts the school system when he turns 3 and they are keepinghis foods in their freezer for us. We buy chicken nuggets at thehealth food store. Making them “just right” got to be a pain. Haveyou not tried giving him a GFCF chicken nugget from the health foodstore? Try Ian’s chicken nuggets. It’s about $5.50 for 12 nuggetballs. My son eats about 3 of them and he’s full but he is alsoyounger. I also found that not battering chicken before frying itworked better when making home made nuggets.
We use canola oil; not Safflower. I buy skinless boneless chickenand cut them into big chunks b/c when you fry them they shrink. ThenI just fry the chicken without batter and my son eats it reallywell. He also started eating grilled chicken nuggets. I just cutthem up and put them on the grill. We don’t use any seasoning, salt,or spices but I’m sure if you go to a health food store you canpurchase GFCF seasoning.
Actually GFCF was the easiest part of BioMedical to us. We had ahard time giving all the supplements within a days time. That washardest for us. We added the SCD diet b/c naturally on GFCF you cookwith a lot of rice and potato floud which feeds yeast and my son’syeast kept getting worse. Someone posted a while back that a really good breading for chickennuggets was crushed ‘Gorilla Munch’ cereal (Enviro Kids is the brand). Ihaven’t tried it but they said that their VERY picky eater loved them.Here is what I take to daycare: Natura Soy milk tetra pks. They come inChocolate, Strawberry or vanilla, rice crackers, Tostitos corn chips, Toffutimozza or american slices, fruit cups, peanut butter to make cracker sandwicheswith the rice crackers.
At school: I make large batches of Shepards pie, spagetti sauce, veg/rice soup.After the meal, I divide them into individual size containers and freeze, put inhis lunches. They heat it for him in the microwave for lunch.

Is this product GFCF?I just ordered Follow Your Heart Mozzarella, to the tune of $5/lb (I think thechunk is 1lb) but the shipping was $24. Yikes! No one around here sells it,and I’m looking for something to put on my son’s “grilled cheese” sandwiches andpizza.

Yes they are GFCF but they are soy based. The brand is Tofutti andactually Tofu is soy so be aware that it’s soy incase your child hasa soy intolerance. Both cheeses are a little hard to melt but acouple of extra minutes in the over and they turn out perfect. Theyalso make a great sour cream and cream cheese that is GFCF and issoy based. Good for cooking with.

I saw this brand in Albertsons a few weeks back but didn’t buy becauseit listed casein on the back. Do they make a gfcf line of cheese?? Ifso where do you get it from.

Since we’re still easing our wayin to GFCF, trying to find acceptable subs for him, that he’ll actually eat, Isliced off 1 slice of the Follow Your Heart, and took out 1 slice of hisnon-gfcf Galaxy Foods Veggie Slices for him, and melted them on a piece of breadfor his grilled cheese. He refused it!So, back to the drawing board for his cheese-sub.

The envirokids gorilla much to make the nuggets was a hit with my six year old son this evening…. Tired of paying almost $6 for only 12 nuggets when he eats four/five per sitting…..
