Wheat-Free and Gluten-Free Pizza Crust recipe

This crispy pizza crust tastes so delicious that your guests won’t know it’s wheat and gluten-free. You can hold a slice in your hand and it won’t crumble! You may also shape the dough into four individual pizzas. Read the rest of this entry »

Gluten-Free Fried Mozzarella Sticks

I’m happy today! A gluten-free food blog posted wonderful recipe for gluten mozarella sticks!

1/4 cup gluten-free flour mix (such as my Rice Flour Mix)
2 cups dry gluten-free breadcrumbs (plain/unflavored)
1 teaspoon salt
1 teaspoon dried parsley flakes
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1 teaspoon ground black pepper
4 eggs
2 tablespoons milk
1 lb whole milk mozzarella cheese, cut into 3/4 inch x 3/4 inch strips (or 1 lb of string cheese, with each stick cut in half)
1 cup vegetable oil
1 cup jarred marinara sauce

Heat the oil in a pan. In a small pot, heat up the marinara sauce (or use microwave).

Whisk eggs and milk together in a bowl or pie tin. In a second pie bowl or pie tin, combine bread crumbs with all of the herbs and spices. Place flour in a third bowl or pie tin.

Coat each piece of cheese with flour. Dip in egg and roll in bread crumbs.

Dip in egg and bread crumbs a second time, making sure that the entire piece of cheese is coated in crumbs.

Carefully place each cheese stick in the hot oil and cook until golden, about a minute on each side. Place on paper towels to absorb excess oil. Serve hot.

Overwhelmed!

I went to the DAN conference this weekend. My brain hurts! My son is 7 years old. He’s a BIG kid, probably 80 pounds and 4 and1/2 feet tall. Takes several prescription meds and many supplementstoo. We’ve never done the diet although we did the no partfor many years.

I can’t imagine starting the diet with a 7 year old. He does eat arange of foods but loves going to restaurants, goes out every nightfor frozen yogurt, etc…. Everyone at the conference was pushingthe diet, and I just kept saying I can’t figure out how I’d do it.

I should mention I am also 6 months pregnant with twins!

We did start about a week ago (chewable AFP and Zyme Prime).

Big problem we have is with hand biting (his hand is SO swollen itbreaks my heart) and tons of stims(head rubbing, ear rubbing, fingerstims, etc…). He was VERY aggressive in the past but we havegotten rid of that problem.

Doesn’t have and doesn’t seem constipated either. He goes tothe bathroom usually once a day.

No phenol vs. phenol assist

Has anyone used Assist, not seen much of a difference, then switchedto No Phenol and seen improvement? (not a well-worded question, buthopefully you get the picture). I am very curious about specific indicatorsthat the No Phenol was working. Thanks for any help you might have.

Looking for experiences w/ anti-yeat diet and methyl b-12 shots

I’ve got Rx filled for B-12 shots and am still deciding when/if tostart giving it. What has your experience been with theMethylcobalamin shots? I’ve also got Nystatin and thinking aboutwhen/how to start it and/or implement a stricter yeast-free diet usingthe “Feast without Yeast” 4 stages. I don’t want to change too manythings at once, so we can try to figure out what’s actually helping ornot. Our lab results are inconclusive about whether or not there’sreally a major issue. TIA for your input.
