I bet if you took those Midel “oreo” type cookies that are gf/cf and melted somelight Fleischmann’s stick margarine you could press it into a pretty decentcrust.

I would use the Lisa Lewis mock oreo recipe that has a choc. cakemix in the ingredients. I( made cookies from it and they tastedvery good (although not exactly like oreos) and I think it wouldhold up to having ice cream on it. Especially if you freeze it inthe pan after cooking it and then put the ice cream in it after wellfrozen.
