Gluten-Free Bread
I found wonderful Gluten-Free Bread recipe:
Put the following in your food processor
2 cups of white rice flour
1/2 cup tapioca flour
2 tsp. xanthan gum
4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
Pulse a few times until incorporated.
Add
2 Tb. honey (I used agave nectar, 1 and 1/4 tablespoon)
2 Tb. oil (I used olive oil)
1 tsp. vinegar (I used white)
2 cups soda water
Pulse a few times, process a little bit more BUT only until the mix is incorporated, DON’T over-process, and then immediately and carefully spoon into an ungreased loaf pan and don’t flatten it or fuss with it just get it into a 350 degree oven and bake for about 35-40 min. Let cool completely in the pan and then gently get it out of the pan.
