Vanilla ice cream
I have made this a few times now and I think I have just the rightrecipe to replace our old favorite Breyers vanilla. Of course, thisis an ice milk but the vanilla flavor is so good that my daughterloves it as much as she loved the Breyers.
I start by making the vanilla simple syrup. I made 2 cups of bothsugar and water and 1/2 of a vanilla bean split several times withthe pulp mashed and scaped out. bring to a boil and then let cooland chill in refrig. Will only use 1 cup of this in ice cream butSierra likes the syrup on her pancakes/waffles/FT too.For ice cream: 3 cups almond milk, 1/2 cup corn or canola oil, 1cup vanilla syrup, 2 tsp vanilla extract, 3/8 tsp guar gum. Combinein ice cream maker 20-30 min. until set.I got a really good vanilla extract from the same place I got thevanilla beans and I think it made a big difference in the flavor.Right out of the ice cream maker it is soft and a nice texture, Ithink. but will freeze very hard if left over night in freezer.May need to put it in the refrig. for an hour or so before you eatit once it is solidly frozen.

What happens if I sub Dari-Free or rice milk for the almond milk? My daughtercan’t do nuts.

the original recipe was with Darifree when I found it but we thoughtit tasted just like Darifree and not really like vanilla so we triedother milks. But it works just fine with Darifree or even rice milk.
