Potatoes

There’s a great recipe we learned at a vegan restaurant on Kauai (take a bow,Hanapepe Cafe). You get a little red or green pepper, fresh rosemary, andcut your potatoes up into little bitty cubes. Use olive oil and fry up. Atthe very end splash a little bit of the amino acid that is a lot like soysauce, but GF/CF. It is divine! As a matter of fact, my husband is makingsome tonight. Makes want to bow their little heads in shame.!

    We eliminated potatoes from our son’s diet all last week just to see ifthey were a problem for him and b/c he will always eat a potato product(chips, fries, etc.) even when he refuses all other food (which ispretty frequent). Some observations of him while off of potatoes were:Increase in dark/purple circles under eyes; decrease in appetite - ateno food but some waffle for breakfast and much less rice milk;constipation. We just put him back on potatoes last night b/c I was toostressed about his no eating. He has had a BM today and at some food atlunch. I can’t tell about the circles - don’t really seem as bad, butcould be subjective. I’m really confused and not sure what to make ofthis, if anything. We also just got our Kirkman’s enzymes (EnzymeComplete w/ DPP IV) and started them yesterday. Maybe we confused thepicture by adding the enzymes and potatoes back. Has anyone had anyexperience with this sort of thing related to potatoes?

    This to me would indicate that he was eating more of a food whichcaused him problems. What did you substitute for the potatoes whilehe was off them?

    Might also have been his detoxing from the potatoes.

    The enzymes might make it that he is tolerating the potatoes. My sontolerates potatoes with Zyme Prime enzyme, and the Kirkman enzymemight also work with potatoes.

    You may have confused the picture by doing two things at once, but ifyour son is doing better now with potatoes and enzymes, then that is agood thing.

    I offered his usual foods, but gave rice cakes to snack on which he eatsregularly as well. He really is not eating. Did not eat much ofanything while off potatoes. I thought he started eating yesterday, buttoday, only potatoes (potato puffs and sticks). Are there other kidsout there that just don’t eat for days on end? My stress levelskyrockets when he doesn’t eat!

    Plain potatoes are okay, assuming the person doesn’t have an allergyto them. You have to watch what they’re served with, though. Butterand sour cream would be no-nos (casein). Mashed potatoes often havemilk and butter added. Sometimes french fries have a coating withgluten on them, or have been fried in oil that has also been used tofry foods containing gluten (like onion rings or other breaded, friedfoods).

    I just tried something last nite that a friend of mine told me about (she’sbeen wheat free her entire life, so are her boys).. but she cubes thepotatoes and then fries them in some oil and then puts some salt on them..taste good.. I used a little bit of peanut oil, just to add a bit of taste.Very good, I even got my hubby to eat them and he’s a picky eater.

    I wish min woudl eat potatoes Iliked baked or just cubed like you say boiledwith pepper and butter. ( We arent casein free anymore just GF)

    Target has Alexis potatoes inthe frozen they have varierty types of fries(you bake) and also mashed(some have milk I am sure on those but all GF.
