Icing for a gfcf birthday cake?
My son will be 4 yo next Sunday, and I have a GFCF chocolate cake mix(Bob’s Red Mill); but, I need some advice on what to top it with. Arethere any GFCF icings? If not, what can I use instead? BTW, we justhad our appt with Dr. Neubrander’s new PA on Saturday, and she checkedhim for yeast. She said that she didn’t see any signs of thrush or yeast.
Also, has anyone tried Bob’s Red Mill Chocolate Cake Mix? Does ittaste good? Any suggestions for making it the best-tasting it can be?

I also had to come up with an icing recipe and I think Icame up with a pretty good one.
4 Tbl Maragine (gfcf)I used Fleishmans light2 cups Powdered sugar1 -2 Tbl Milk I used silk vanilla soymix maragine and powdered sugar and slowly add the milk until it isthe right consistancy. You can add cocoa to make it chocolate. Idon’t know how much but just add a Tablespoon at a time until it’sas rich as you like it.

I have tried the brownies and though they were vile. I prefer tehNamaste brand cake mixes they are dense and delicious. They do well asa cake. I have to substitute eggs with banana, but they still arewonderful.
Rejuvenative Foods makes a product called Chocolate dream. It is athick spread like Nutella, but made with honey, tahini, sunflower oiland cocoa. It’s totally GFCF. It is very thick, however, so you wouldhave to experiment with thinning it out to a spreadable consistency. Ihave my son’s birthday in January, so I have not tried this yet.
Otherwise, why don’t you just make a chocolate glaze like they use ondonuts? It thinner that thick frosting, but really the kids won’tcare.

Not sure if someone gave you this answer yet- We used a mix from msrobens. Itwas a vanilla buttercream mix. We made it with spectrum shortening, but ifyou’re allowed soy it tastes better with margarine. Good Luck
