Sandwich fillings
Anyone have any tasty, kid friendly sandwich fillings to share? We’re tiredof lunchmeat, peanut butter, or tuna here. Not all my kids must have GFCFstuff, so ANY ideas are welcome! We’ve tried all the variations on the “usualsuspects”–soy cream cheese and jelly, Ricemellow creme and Peanut butter,banana and nut butter, and even that VILE looking “deviled ham” (which my olderdaughter just LOVES)! I’m looking for more ideas because we’re in a rut.

Those were good ideas! You know, I think sometimes because I have anultra fussy husband that my kids will be picky, too, but most often when I givethem something new, they surprise me. They DID like liverwurst, now that Ithink of it. Cucumbers and cream cheese? We just stopped buying most dairy here,since half of us can’t have it. But I have a tiny bit of cream cheese left inthe container. If the boys like it, I’ll keep buying that for them. Eggsalad–why didn’t I think of that? Sheesh! This is why I need you guys! They saywith every kid, you lose brain cells. Well, with eight kids, you can onlyimagine! ROFL!!!

Cucumber Sandwiches can also be done with mayonnaise. We useHellman’s.

Ha, I forgot about the cream cheese. I think they make the soy. My son can’thave any of this. These allergies are terrible! We just rotate the nut buttersand sugar free jellies on pancakes for lunches. I’m still working on trying toget things up and running. We are also on a rotation diet and the choices wehave for each day aren’t always the best. I may need to do some swapping oncewe get more into it.Good luck

I love salads, too, but bologna salad??? LOL! I think maybe I’ll drawthe line there for myself! But my kids might actually love this, if I can findan acceptable bologna–having a hard time finding one they can have! I’mchecking the Kosher meat market tomorrow.

Those rotation diets just confuse me! God bless anyone who can figurethem out! I can eliminate a lot of stuff, but the diet has to be consistenteach day or I’ll lose it completely! LOL! And just trying to keep straight whocan have soy, who can’t have gluten, who needs this or that–whew! By”swapping”–you weren’t referring to the KIDS, were you????
Ispent four hours today running errands with two of the girls, and I spent 99%of that time trying to get Anna to do what I needed her to do–Anna don’t tapon the man’s desk, Anna come here, Anna don’t touch that, Anna knock it off!AAAAHHHHHHH!!!!! Can’t imagine why everywhere we go people know her name! :O

Everyone at my regular stores knows my #2’s name, for exactly thisreason. The store employees address him by name now, which is niceespecially when he was learning to respond to others.

Ha! Sounds like you have an active one! We were given a rotation dietfrom the dr. that has a list of foods he can eat on which day. This hashelped a lot. The rest of us kind of follow it also, at least fordinner. It kind of helps narrow done the choices about what to eat :-),but with his allergies, there isn’t a lot of choice and much of it iswhat we never or usually didn’t eat. We have been eating a lot of plainstuff lately. I need to get something written down to help with theorganization and recipes, etc. Sometimes I make him something and thenfix it up more for us. It’s been challenging to say the least and I amspending more time in the kitchen than anything else anymore.Swapping was the food families.

I don’t know anything much about rotation diets. I do know that menuplanning helps TREMENDOUSLY, though, no matter what diet you are on! I have doneplans for GFCF/Feingold before, and it was such a wonderful thing to haveeverything written out so I could shop more efficiently, and know what I wasgoing to do. I don’t know if this would help you, but I know it was a LOT easierthan I had thought it would be, and it didn’t take long to do.
Once you know what your main meat, grain, etc., is for the day, maybe youcould come up with ways to “jazz it up”, or ask here and someone else would haveideas. There’s also websites like http://www.foodyoucaneat.com orwww.mealsforyou.com, which have tons of recipes, and you can customize them tolook for only thethings you want in them. I did this myself and came up with some good ideas.

Well, my mother YEARS ago used to make bologna salad. Think ham salad, justbologna instead! She’d buy a “chunk” of it at our deli, and hand-grind it. Addhard-boiled eggs, salt/pepper if you want, relish, mayonnaise…I think that’sall. I always loved that. Or, make ham salad using the same ingredients. Or, eggsalad.
