Panic has set in!
Hi all. I really need your advice right away. We had our son’s bloodtested - received the results and interpretation today - he had high levels ofgluten and casein antibodies in his blood. We know we need to change is diettoa GFCF diet but we’re afraid…very afraid. As most children, my son isvery picky about the foods he eats and will not introduce new foods into hisdiet. How am I going to replace the very few things he will eat with a GFCFdiet? For example, my son LOVES cream cheese (in fact we joke with him thathe’s going to turn into cream cheese one day - and he responds with a smile”like a caterpillar turns into a butterfly, right mommy?) I am in a sheerstateof panic right now. I need to find a suitable substitute for cheese ravioliand for cream cheese because those are the staples of his diet right now.
Any advice or direction you can provide will really be appreciated!

Toffuti makes a cream cheese that tastes like the real thing. However, itis Soy which isn’t a good substitute for dairy. But we use soy in arotation diet. So every 3 to 4 days we will allow some soy products in.For a while we would do various favorite foods one day, new ones the nextand so on. Then we would start over after 4 days. In our opinion beingGFCF was VERY important and the Soy for him was a low allergen- so therotation diet has worked well.

Take gluten and casein out entirely. For other high allergens (soy, eggs,peanut butter, corn) rotate them in order to not develop other allergies.But take out gluten and casein totally.

I guess you could substitute tofutti and Tinkyada rice pasta as an interim step to healthier eating. But I have a feeling he won’t like the substitutes because what he likes is the gluten and casein.
Trying to find substitutes is a little tricky. A NYC environmental allergist told us that kids often crave what they are most allergic to (similar to alchoholics who don’t eat.)
My kids diet actually expanded when I took out their favorites. And they didn’t do as well when I finally found GF substitutes. I don’t recommend loading up on soy when you start the GFCF diet until you have been doing the GFCF diet for a while. Often the body will see soy as a similar molecule and not get better. After a few months you can add soy back in every few days and see if there is a reaction.
I have read sometimes if you are allergic to things, you have a slight high from them that is why you have cravings.
We told my daughter:”We took a test and we found out you can’t eat gluten.We want you to be the best you that you can be and this is going to help you grow to be healthy and strong. It will be hard at first, but it will get easier and you will feel better. And I am going to help you.”
