LEMON CAKE PUDDING

3/4 cup granulated sugar
2 tbsp potato flour
1 1/4 tsp grated lemon rind
1/4 cup lemon juice
2 tbsp vegetable oil
2 eggs, separated
1 cup milk

Mix sugar, flour and salt and stir in lemon rind, lemon juice and vegetable oil. In other bowl, slightly beat egg yolks, and add milk. Pour it to lemon mixture and blend well. Then beat white eggs until stiff peaks form and pour into lemon mixture. Then take 1 quart baking dish, put the mixture in it and place it into a larger pan with one inch hot water. Bake at 350 degrees for about 45 minutes or until cake gets tender. Serve warm or cooled. Makes 4-6 servings.
