Need carrot cake ideas

I have bought some Gluten Free Pantry spice cake mix and was thinkingof adapting it to a carrot cake by adding shredded carrot. Has anyonedone this and what suggestions do you have to make this a more likelysuccess!?

    1 bag (14 oz) Gluten-Free Pantry Spice Cake Mix1 egg plus 1 white, beaten1/3 c. vegetable oil3/4(scant) unsweetened applesauce1 cup(scant) grated zucchini, undrainedPreheat oven to 350 degrees. Combine all ingredients. Pour into alightly oiled 9×5 inch loaf pan. Bake 45 minutes. Cool in pan for 10minutes. Turn onto wire rack and cool completely. Slice and enjoy.
